Preheat the oven to 180°C, gas mark 4. Coat the chicken in the marinade, cover and set aside for 30 minutes. Roast the chicken for 16-18 minutes, or until cooked through, the juices run clear and no pink meat remains.
Meanwhile, heat the ghee in a large frying pan and fry the sliced onions for 15 minutes until golden brown. Add the Rogan Josh sauce and simmer for 5 minutes. Pour in the Butter Masala sauce, add the cooked chicken and mix well to combine; cover and simmer for 5 minutes. Scatter with coriander, then serve with basmati rice or naan, if liked
