Place the cheese, yogurt and 1 tsp oil into a small food processor and whizz until smooth. Season.
Preheat the grill to high. Put the peaches on a small baking tray, cut-side up, and drizzle with the honey and remaining oil. Grill alongside the bread for 4-5 minutes until lightly browned on both sides. Scatter the thyme leaves over the peaches.
Spread the goat’s cheese mixture on the toast, spoon over the peaches and any juices, grind over some black pepper and serve.
