Whipped goat’s cheese & peach tartines

These grilled peach toasts make a wonderful summer lunch and can easily be scaled up and cut into smaller pieces for serving as party bites.

Ingredients

  • ½ x 150g pack Chavroux Soft Ripened Goat’s Cheese Log, diced
  • 3 tbsp Essential Greek Style Natural yogurt
  • 2 tsp olive oil
  • 2 peaches, stones removed, then quartered
  • 2 tsp clear honey
  • 2 slice/s Waitrose wheat and rye sourdough bread
  • 2 sprig/s lemon thyme, leaves only

Method

  1. Place the cheese, yogurt and 1 tsp oil into a small food processor and whizz until smooth. Season.

  2. Preheat the grill to high. Put the peaches on a small baking tray, cut-side up, and drizzle with the honey and remaining oil. Grill alongside the bread for 4-5 minutes until lightly browned on both sides. Scatter the thyme leaves over the peaches.

  3. Spread the goat’s cheese mixture on the toast, spoon over the peaches and any juices, grind over some black pepper and serve.
