Ingredients

  • 1 watermelon, skin on, cut in wedges
  • 1 block of feta
  • 3 tbsp Greek yogurt
  • drizzle of extra virgin olive oil
  • Lime, zest (to serve)
  • Pul biber (optional), to serve
  • 2 sprig/s mint, leaves only

Method

  1. Cut the watermelon into wedges, then set aside.

  2. Put the block of feta in a food processor with a few spoonfuls of Greek yogurt (the ratio should be about 3:2). Whizz until smooth, then gradually drizzle in a little extra virgin olive oil until rich and creamy.

  3. Season, then spread over a platter. Top with watermelon wedges scattered with lime zest, a little pul biber and some mint leaves. Drizzle over more extra virgin olive oil to serve.
