Ingredients

  • 2 Duchy Organic Leeks, finely sliced
  • 2 Green Thai Inspired Cod Fillets
  • 1 unwaxed lime, ½ sliced, ½ in wedges
  • 2 tsp soy sauce
  • ½ tsp fish sauce
  • 250g pouch basmati rice
  • ¼ x 20g pack Thai basil, leaves picked

Method

  1. Preheat the oven to 190ºC, gas mark 5. Lay 2 large rectangles of baking parchment on a work surface. Put the leek slices in a small pile on one side of each parchment rectangle, then sit the cod and the butter it comes with on top. Season, then add the lime slices plus the soy and fish sauces. Fold the rectangles over, crumpling the edges to seal them. Put on a baking tray and bake for 19-20 minutes, until the fish is opaque and flakes with a fork.

  2. Meanwhile, cook the rice according to pack instructions. Serve alongside the fish and leeks, squeezing the lime wedges over the fish and scattering with the Thai basil.
