Ingredients

  • 400g pack strawberries, hulled and sliced
  • 2 tbsp caster sugar
  • ½ lemon, juice
  • ½ x 1 L tub vanilla dairy ice cream
  • 1 pack 12 Cooks’ Ingredients Mini Eton Mess Meringues

Method

  1. Place the strawberries, sugar and lemon juice into a bowl and stir together well. Set aside for 30 minutes.

  2. Line a 900g loaf tin with baking parchment or a loaf tin liner. Layer small scoops of ice cream, the strawberry mix and meringues into the tin, pressing down firmly.

  3. Cover and freeze for at least 3 hours, or preferably overnight. Remove from the freezer, peel away the parchment, then use a large, sharp knife to cut into 8 slabs and serve.
