Ingredients

  • 1 tbsp Essential Vegetable Oil
  • 2 red onions, thinly sliced
  • 245g The Spice Tailor Classic Fajita Kit
  • 2 red peppers, deseeded and thinly sliced
  • 1 avocado, finely chopped
  • 200g tomatoes, finely chopped
  • 25g pack coriander, leaves chopped
  • 1 lime, juice of ½ plus wedges
  • 165g raw extra large king prawns
  • 8 soft taco wraps, warmed
  • 4 tbsp soured cream

Method

  1. Warm the oil in a large frying pan, add most of the onions and fry with the spices from the fajita kit for 5 minutes. Add most of the peppers and fry for 5 minutes more until soft.

  2. Finely chop the remaining onions and peppers, then add to a bowl with the avocado, tomatoes and the salsa pouch from the fajita kit. Mix well, stir through half the coriander and the lime juice, then season.

  3. Add the prawns to the onions and peppers, stir fry for 3 minutes until just pink, then stir through the sauce pouch from the fajita kit. Simmer for 2 minutes until the prawns are cooked through and opaque.

  4. Serve the spicy prawns at the table with the taco wraps, salsa, soured cream and remaining coriander, with lime wedges for squeezing.

Cook’s tip

Feel free to change the protein – these fajitas would be delicious with pork, chicken or tofu. Amend the cook times so pork or chicken is cooked through with no pink meat and juices that run clear.
