Ingredients
- 2 x 230g packs Speciality Figs, tough stems removed, quartered lengthways
- 150g pack blackberries
- 150g caster sugar
- 2 star anise
- 1 cinnamon stick
- 1 large orange (scrubbed), 2-3 long strips pared zest, plus 3 tbsp juice
Method
Sterilise a 600g jar (or two smaller jars). Put all the ingredients, apart from the orange juice, in a medium pan with 170ml water. Bring to the boil, reduce the heat to low and simmer for about 50 minutes, stirring gently from time to time, taking care not to crush the fruit.
Once the fruit is very soft and the liquid reduced and syrupy, remove the pan from the heat and stir in the orange juice. Set aside to cool completely, then remove the cinnamon stick and strips of orange zest. Transfer to the sterilised jar(s) and store in the fridge for up to 6 weeks.
Cook’s tip
Spoon this spiced fig preserve over Greek yogurt with toasted walnuts, dollop over the top of a baked cheesecake or cake filling, or simply spread on toast. It makes a lovely gift, too.
