Ingredients

  • 250g pack wholegrain Mexican style rice
  • 3 tbsp natural yogurt
  • 1 unwaxed lime, zest and wedges
  • 1 chopped avocado
  • 2 sliced salad onions
  • 1 sliced jarred red pepper
  • 250g shredded cooked chicken

Method

  1. Heat a wholegrain Mexican style rice according to pack instructions; cool in a bowl. Mix natural yogurt and the zest of unwaxed lime; season. To the rice, add chopped avocado, sliced salad onions, sliced jarred red pepper and shredded cooked chicken; mix well.

  2. Box up with the yogurt to one side, plus lime wedges.
