Smoked harissa & prawn orzo

Ingredients

  • 3 tbsp olive oil
  • 50g soft white breadcrumbs
  • 6 clove/s garlic, finely chopped
  • 350g Duchy Organic Orzo
  • 300g Duchy Organic Frozen Garden Peas
  • 200g pack Duchy Organic Cherry Vine Tomatoes
  • 2 x 150g packs Duchy Organic Raw King Prawns
  • tbsp smoked chilli harissa
  • 1 lemon, cut into wedges

Method

  1. Heat 1 tbsp oil in a wide-based pan over a low heat, then add the breadcrumbs and ¼ tsp of the chopped garlic. Cook, stirring, for 3-4 minutes until golden brown all over, then tip into a bowl and set aside.

  2. Bring a large pan of salted water to the boil. Once boiling, add the orzo and cook for 8 minutes, adding the peas for the final 3 minutes. Meanwhile, put the remaining 2 tbsp oil in the first pan over a medium heat. Once hot, add the remaining garlic and the tomatoes. Cook for 2 minutes, until starting to soften. Add the prawns and harissa. Cook, stirring, for 4-5 minutes until the prawns are pink and opaque.

  3. Drain the orzo, reserving a mugful of the cooking water, then tip the pasta and peas into the prawn pan, along with 5-6 tbsp cooking water. Stir until combined. Serve topped with the toasted breadcrumbs and the lemon wedges for squeezing.

Boost the veg

Grate 2 courgettes and fry with the garlic for 5 minutes before adding the harissa and prawns.
