Roasted chorizo & swede salad

Swede might not be your first thought for a salad, but it tastes incredibly good combined with spicy chorizo and this make-it-on-repeat dressing.

Ingredients

  • 1 Waitrose Swede (about 450g), peeled and cut into 1.5cm cubes
  • 2 red onions, peeled and cut into thin wedges
  • 2 tbsp olive oil
  • 190g pack cooking chorizo, quartered
  • 1 lemon, juice
  • 2 tsp mango chutney
  • 2 x 300g packs wheatberries, lentils & green veg
  • 90g pack wild rocket
  • ¼ x 20g pack lemon thyme, leaves picked

Method

  1. Preheat the oven to 200ºC, gas mark 6. Toss together the swede and red onion wedges in 1 tbsp oil; season and spread over a large baking tray. Roast for 15 minutes. Stir in the chorizo and cook for another 15-20 minutes or until the swede is tender and the chorizo is fully cooked.

  2. Meanwhile, make a dressing by whisking together the remaining 1 tbsp oil, the lemon juice and mango chutney. When the swede and chorizo are cooked, take the tray out of the oven and cool for 5 minutes.

  3. Meanwhile, heat the wheatberry pouches according to pack instructions. Put in a bowl with the swede, chorizo and onions, then toss with the dressing. Divide between plates, along with the rocket, and sprinkle with the lemon thyme leaves.

Cook’s tip

Simple swap, Chorizo 

Vegetarian? Simply swap the chorizo for cubes of halloumi or Waitrose Plant Living No Chorizo Sausages.
