Raspberry & cardamom lassi

A lassi is a refreshing yogurt drink popular in South Asia. This makes a winning breakfast smoothie – use vanilla seeds or a pinch of cinnamon instead of the cardamom if you prefer.

Ingredients

  • 3 cardamom pods
  • 150g No.1 Speciality Raspberries
  • 1 tbsp mild-flavoured honey
  • 300g low fat natural yoghurt
  • 50ml skimmed milk
  • 1 pint/s salt
  • 100g ice cubes

Method

  1. Bruise the cardamom pods with a rolling pin and shake out the seeds; crush using a pestle and mortar or with a rolling pin on a chopping board. Put the crushed seeds in a blender with the raspberries (reserving 8 to garnish), honey, low-fat natural yogurt, skimmed milk, a tiny pinch of salt and the ice cubes. Blend on high speed for about 2 minutes until bright pink and smooth. Divide between 2 glasses and top with the reserved raspberries.
