Ingredients
- 1 quantity marinade (see Cooks' tip)
- 4 sirloin steaks
- 6 tbsp mayonnaise
- 4 ciabattas (toasted on the barbie, if you like)
- watercress
- salt
Method
Put your chosen marinade (see Cooks' tip below) in a non-reactive bowl or large container. Season the sirloin steaks with a little salt, then add to the marinade, turning to coat. Chill for at least 30 minutes (or up to 12 hours).
To cook, lift the steaks out of the marinade, draining off and discarding any excess, then put the steaks on the barbecue (ideally over a medium-high heat). Cook for 2 minutes, then turn and cook for another 2 minutes. Keep grilling, turning regularly, until thoroughly browned on the outside and cooked to your liking. If using a thermometer, it should reach about 55ºC for medium rare. Transfer to a board or warm plate to rest for 5 minutes.
For the ultimate steak sandwich: mix an extra ½ quantity marinade through mayonnaise to make a sauce. Dollop onto ciabattas (toasted on the barbie, if you like) with thin slices of steak and some watercress.
Cook’s tip
Try making one of our favourite marinades for this recipe: Preserved lemon and zhoug marinade, Herby anchovy marinade or Soy and gochujang marinade.
Make an extra half quantity of marinade and stir through thick Greek yogurt to serve alongside the skewers.
