Pea & feta burgers

These delicate burgers are a far cry from the dense bean burgers of old. Serve them with salad, either with sweet potato fries or packed into buns.

Ingredients

  • 300g frozen Essential Garden Peas, thawed and drained
  • 100g ricotta
  • 1 mixed size free range egg
  • 2 tbsp Cooks' Ingredients Zaatar
  • 75g fresh white breadcrumbs
  • 125g feta, roughly crumbled
  • 2 tbsp sunflower oil, for shallow frying

Method

  1. Whizz the peas in a small food processor or blender until finely chopped but still with some texture.

  2. Tip the peas into a large bowl and mix in the ricotta, egg, zaatar, breadcrumbs and some seasoning. Gently fold in the feta, then firmly shape into 4 even-sized cakes about 10cm across. If you have time, cover and chill for 30 minutes or so to allow the burgers to firm up a little.

  3. Gently heat the oil in a large nonstick frying pan and gently cook the burgers over a medium-low heat for 5-6 minutes each side, until crusty and dark golden. Serve with sweet potato fries and salad or in burger buns, if liked.

Cook’s tip

Leftover ricotta can be dotted over pasta or pizza, spread over summery bruschetta and is a great ingredient for baking too. Search waitrose.com/recipes for more ideas.
