Whizz the peas in a small food processor or blender until finely chopped but still with some texture.
Tip the peas into a large bowl and mix in the ricotta, egg, zaatar, breadcrumbs and some seasoning. Gently fold in the feta, then firmly shape into 4 even-sized cakes about 10cm across. If you have time, cover and chill for 30 minutes or so to allow the burgers to firm up a little.
Gently heat the oil in a large nonstick frying pan and gently cook the burgers over a medium-low heat for 5-6 minutes each side, until crusty and dark golden. Serve with sweet potato fries and salad or in burger buns, if liked.
