Mixed spice skeleton biscuits

Ingredients

  • 125g unsalted butter
  • 100g dark brown muscovado sugar
  • 4 tbsp golden syrup
  • 325g plain flour, plus extra for dusting
  • 1 tsp bicarbonate of soda
  • 2 tsp mixed spice
  • 2 x 50g tubes Dr Oetker White Decorating Icing (or see tips)
  • 40 Cake Decor Edible Eyes

Method

  1. Preheat the oven to 170°C, gas mark 3. Line 2 large baking trays with baking parchment. Melt the butter, sugar and syrup together in a pan, then remove from the heat.

  2. Sieve in the flour, bicarbonate of soda and mixed spice, then stir together to make a stiff dough.

  3. On a lightly floured surface, roll out to 5mm thick. Using a medium gingerbread man cutter (about 12x9cm), cut out 20 or so gingerbread men and place onto the prepared trays, rerolling the dough as needed. Bake for 10-12 minutes, then remove from the oven and allow to cool completely.

  4. Use the icing to decorate the biscuits with bones and smiley faces, with a little extra icing to stick on some eyes. Leave to set before serving.

Cook’s tip

If you find the icing tubes a little stiff to use, put them (lid on) into a bowl of warm water to soften. You can also decorate these with your own icing. Use a tub of royal icing, thinned with a splash of water if needed. Spoon into a disposable piping bag and snip off a small point at the end to begin.
