Melon, avocado and serrano ham platter

Ingredients

  • 4 tbsp extra virgin olive oil
  • 2 tsp clear honey
  • ¾ tsp paprika
  • 1 lime, juice
  • 2 Perfectly Ripe Avocado
  • ½ cantaloupe melon, cut into 4 even segments
  • ½ x 25g pack mint, leaves picked
  • 90g pack serrano ham

Method

  1. In a small bowl, use a fork or small whisk to combine the oil, honey, paprika and lime juice until well combined and emulsified (or shake the ingredients together in a clean jam jar). Season and set aside.

  2. Halve the avocados, then thinly slice each ½. Remove the rind from the melon segments, then cut each into 3 thin slices. Arrange both over a platter and scatter over the mint leaves, tearing any larger leaves. Spoon ¾ of the dressing generously over everything. Drape the serrano ham around the avocado and melon, then drizzle a little more dressing over the top.

LEFTOVERS Cantaloupe melon

Chop any remaining fruit, then freeze in a bag. It’s then ready to add straight to a blender to make smoothies or slushy-style cocktails.
