Ingredients
- 4 tbsp extra virgin olive oil
- 2 tsp clear honey
- ¾ tsp paprika
- 1 lime, juice
- 2 Perfectly Ripe Avocado
- ½ cantaloupe melon, cut into 4 even segments
- ½ x 25g pack mint, leaves picked
- 90g pack serrano ham
Method
In a small bowl, use a fork or small whisk to combine the oil, honey, paprika and lime juice until well combined and emulsified (or shake the ingredients together in a clean jam jar). Season and set aside.
Halve the avocados, then thinly slice each ½. Remove the rind from the melon segments, then cut each into 3 thin slices. Arrange both over a platter and scatter over the mint leaves, tearing any larger leaves. Spoon ¾ of the dressing generously over everything. Drape the serrano ham around the avocado and melon, then drizzle a little more dressing over the top.

Chop any remaining fruit, then freeze in a bag. It’s then ready to add straight to a blender to make smoothies or slushy-style cocktails.
