Ingredients

  • 50ml Aperol
  • 1 tbsp mango purée (made by blending frozen mango chunks)
  • 25ml lemon juice
  • 10ml sugar syrup
  • 1 egg, separated, use white only
  • 3 drop/s Angostura Bitters

Method

  1. Chill a Nick & Nora glass in the freezer while you make the cocktail. Shake the Aperol, mango purée, lemon juice, sugar syrup and egg white. Add ice and shake again until chilled.

  2. Strain into the chilled glass. Garnish with the Angostura Bitters.
