Lamb skewers

Juicy lamb leg steaks are a brilliant match for a punchy marinade. Marinate a day ahead so they’re ready to throw on the barbecue when you need them. We like to serve these skewers with a simple Minted Cucumber Labneh Salad. Watch: How to cook lamb skewers

Ingredients

  • 4 extra trimmed lamb leg steaks

Option 1: Preserved lemon & zhoug marinade

  • 2 tsp Cooks’ Ingredients Preserved Lemon Paste
  • 2 tbsp Cooks' Ingredients Zhoug
  • 1 clove/s garlic, crushed
  • ½ x 25g pack mint, leaves finely chopped
  • 5 tbsp extra virgin olive oil
  • ½ lemon, juice

Option 2: Herby anchovy marinade

  • 2 tsp Cooks’ Ingredients Frozen Chopped Shallots
  • ⅓ x 100g jar anchovy fillets (about 8), drained + 1 tbsp anchovy oil from the jar
  • ½ x 25g pack flat leaf parsley, leaves roughly chopped
  • tbsp sherry vinegar
  • 3 tbsp extra virgin olive oil
  • ½ tsp clear honey

Option 3: Soy & gochujang marinade

  • tbsp caster sugar
  • 2 tbsp soy sauce
  • tbsp Cooks’ Ingredients Gochujang Chilli Paste
  • 1 tbsp toasted sesame oil
  • 3 tbsp Japanese rice vinegar
  • 2 clove/s garlic, crushed
  • ½ tsp chilli flakes

Method

  1. Make your chosen marinade by putting all the marinade ingredients into a large bowl and whisking together until well combined, and season if required.

  2. Cut the leg streaks into 2cm pieces and put in a bowl with the marinade, massaging into the meat well. Cover and chill for at least 2 hours (up to 24 hours).

  3. Thread the marinated lamb onto 8 skewers and then cook on a hot barbecue for about 3 minutes per side, or until thoroughly browned on the outside and cooked to your liking.

Cook’s tip

Make an extra half quantity of marinade and stir through thick Greek yogurt or mayonnaise to serve alongside the skewers. Any excess marinade must be discarded after contact with raw meat, poultry or fish.
