Ingredients
- One quantity of marinade (see Cooks' tip below)
- 4 extra trimmed lamb leg steaks
Method
Cut the leg streaks into 2cm pieces and put in a bowl with the marinade of your choice (see Cooks' tip below), massaging into the meat well. Cover and chill for at least 2 hours (up to 24 hours).
Thread the marinated lamb onto 8 skewers and then cook on a hot barbecue for about 3 minutes per side, or until thoroughly browned on the outside and cooked to your liking.
Cook’s tip
Try making one of our favourite marinades for this recipe: Preserved lemon and zhoug marinade, Herby anchovy marinade or Soy and gochujang marinade.
Make an extra half quantity of marinade and stir through thick Greek yogurt to serve alongside the skewers.
