Heart-shaped breakfast oat bar

Ingredients

For the dry mix

  • A little oil, for greasing
  • 125g porridge oats
  • 30g almonds, flaked or roughly chopped
  • 20g desiccated coconut
  • 40g dried mango, diced into cubes
  • ¼ tsp ground ginger
  • ¼ tsp sea salt flakes

For the binding

  • 50g maple syrup (or use honey if you prefer the flavour)
  • 50g coconut oil
  • 50g golden caster sugar

For decoration (optional)

  • 25g Cooks’ Ingredients Belgian White Chocolate, chopped

Method

  1. Preheat the oven to 190ºC, gas mark 5. Grease and line a 20cm round sandwich tin with baking parchment. If you like, make a heart-shape space in the tin using kitchen foil (see tip). Mix all the dry ingredients together in a bowl. Place all the binding ingredients in a small pan and bring to a boil.

  2. Add the dry mix to the small pan and mix well to combine. Transfer to the lined tin, press the mixture down with the back of a spoon to compress, then bake for 25 minutes until golden.

  3. Cool for a few minutes, then pop it out from the tin and foil heart shape, if used, so it doesn’t stick. Cool completely.

  4. To decorate, melt the chocolate in a heatproof bowl, in short bursts in the microwave, or over a pan of barely simmering water. Stir until smooth, then pipe or drizzle your message on top and leave to set.

Cook’s tip

You can easily shape this into a heart using a little kitchen foil to form the top triangle and a little on the sides to form the lines or bake in a 20cm heart-shaped cutter or cake tin.
