This alcohol-free twist on the classic from Celentano’s in Glasgow uses Caleño Light & Zesty, but you can experiment with other tangy alcohol-free spirits.

Ingredients

  • ½ unwaxed lemon, zest
  • 1 tbsp rock salt
  • 10ml agave syrup (plus extra to serve)
  • 50ml Caleño Light & Zesty
  • 25ml freshly squeezed grapefruit juice
  • 15ml freshly squeezed lime juice
  • Twist of unwaxed orange zest (optional)

Method

  1. Mix a little unwaxed lime zest and rock salt on a plate (enough to cover 1⁄2 of a side plate). Roll one side of a coupe glass in agave syrup, then dip into the salt mix to cover. Add the Caleño Light & Zesty, freshly squeezed grapefruit juice, freshly squeezed lime juice and 10ml agave syrup to a cocktail shaker, fill with ice and shake well. Double strain into the coupe glass and garnish with a twist of unwaxed orange zest, if liked.
