Frozen piña colada

This frozen coconut and pineapple classic from Honey & Co will add a welcome touch of summer sunshine. Smooth to drink, it serves four, although we suggest it for two, as it’s very drinkable and you’ll be looking for a top up!

Ingredients

  • 250g ice cubes
  • ½ x 500g pack prepared pineapple
  • 160g can coconut cream
  • 150ml Malibu
  • 80ml white rum or tequila

Method

  1. Place 4 tall cocktail glasses (approx 250ml volume) in the freezer for 1 hour. Add ½ the ice and the pineapple cubes to a small blender, and blitz until slushy.

  2. Add ½ the coconut cream with both spirits and blitz again until the mixture has a smooth, fluffy white texture. Pour immediately into 2 of the frozen glasses, then serve. Repeat with the remaining ice and other ingredients.

Cook’s tip

Not all blenders can crush ice cubes. If you think yours can’t, wrap the ice cubes in two clean tea towels, then bash with a rolling pin or heavy saucepan before blending. Or you can buy ready-crushed ice in a bag. If you are keeping some mix for later,  place it in the freezer and blitz again just before serving (assuming it won’t be too  long – 30 minutes or so – so it doesn’t  get a chance to freeze solid). If you have a classic large blender, the entire mix can be blitzed at once.
