Fig & Gorgonzola toastie

Ingredients

  • 140g figs, each sliced into 4
  • 4 sprigs rosemary, leaves picked
  • 1 tbsp clear honey
  • 1 Ciabatta* (350g)
  • 200g pack Gorgonzola, broken into small pieces
  • 125g grated mozzarella
  • ½ small red onion, thinly sliced
  • 1 tbsp olive oil

Method

  1. Preheat the oven to 200ºC, gas mark 6. Put the figs in a small roasting tin, toss with the rosemary and drizzle over the honey, then season and spread out into one layer. Roast for 10-15 minutes, until sticky and turning golden at the edges.

  2. Slice the ciabatta in ½ horizontally. Open out and top one side with the cheeses, figs, some of the crisp rosemary and the red onion. Put the top on and cut into quarters.

  3. Put the oil in a large frying pan over a low-medium heat. Once the pan is hot, put the sandwiches in (depending on the size of your pan, you may need to work in batches). Put another pan on top of the sandwiches with something heavy inside (a can of beans is perfect). Fry for 4-5 minutes before flipping and repeating. Keep an eye on how dark the bread is getting and lower the heat if necessary.
