Corn & blackberry pamonha de forno

Traditional Brazilian pamonha is made from grated fresh corn steamed in husks. Here, the pamonha is baked instead, resulting in a pudding-like texture. I’ve adapted it to make a sweet dessert, drawing inspiration from French clafoutis. Instead of a flour-based batter, I like to use blended corn as the base. Its natural sweetness pairs beautifully with tart autumn berries.

Ingredients

  • 300g blackberries
  • 125g blueberries
  • 40g light brown soft sugar
  • ½ tbsp olive oil
  • Crème fraîche, to serve

Batter

  • 500g frozen sweetcorn, defrosted
  • 400ml can coconut milk
  • 3 medium free range eggs
  • 110g polenta
  • 110g light brown soft sugar
  • 80g feta
  • 2 tsp vanilla bean paste
  • tsp baking powder
  • ¼ tsp ground cinnamon
  • 1 unwaxed lime, zested then cut into wedges
  • 1 tangerine (scrubbed), zest

Method

  1. Preheat the oven to 200ºC, gas mark 6. Put all the batter ingredients except the lime wedges in a blender or food processor and whizz until smooth, scraping down the sides as needed.

  2. In a bowl, mix the blackberries and blueberries with the sugar. Brush a 30cm ovenproof dish (such as a shallow cast-iron casserole) with the oil. Pour in the batter, then cover evenly with the sugared fruit. Bake for 20 minutes, then lower the heat to 180ºC, gas mark 4, and bake for another 30 minutes until browned on top. Leave to cool for at least 20 minutes, then serve with crème fraîche and lime wedges for squeezing.

And to drink...

Lager is a great choice but, if you’re not a fan, start with a buttery white such as Errázuriz Gran Reserva Chardonnay, Chile*. Its richness balances the crab and complements the spicy chorizo.

For the main, go for something crisp and dry such as Tierra Sagrada Organic Blanco, Spain. The acidity and mineral notes work well with seafood.

Dessert deserves a treat, too – try Waitrose Blueprint Moscatel de Valencia, Spain. Made with the Moscatel of Alexandria grape, it’s dreamy with the pudding.
