Ingredients

  • 3 tbsp light soy sauce
  • 2 unwaxed limes
  • 1 cucumber, diced
  • 1 perfectly ripe mango, diced
  • 220g pack cooked extra large king prawns
  • 250g frozen edamame beans
  • 250g pack wholewheat noodles
  • 25g pack coriander, leaves picked

Method

  1. In a large bowl, mix the soy sauce with the zest and juice of 1½ limes. Add the cucumber and mango to the bowl, then add the prawns.

  2. Bring a large pan of water to the boil and cook the beans for 4 minutes, until tender and piping hot. Using a slotted spoon, remove the beans to a sieve and cool under cold water. Put the noodles into the boiling water and cook according to pack instructions.

  3. Drain the noodles, rinse thoroughly under cold water, then add to the bowl with the beans. Add the dressing and toss together until combined and everything is coated.

  4. Pile the salad onto serving bowls and scatter over the coriander. Serve with the remaining lime half for squeezing.

Cook’s tip

This noodle salad is perfect for preparing ahead. Keep the dressing separate and combine just before serving. You could take a further shortcut and use a 190g pack edamame bean salad, which comes with soy dressing.
