Chicken & baby corn fajitas

Ingredients

  • 2 2 British chicken breast fillets
  • 2 sweet peppers (1 orange, 1 red)
  • 1 large red onion
  • 190g pack Baby Corn
  • 2 tbsp sunflower oil
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tsp Cooks’ Ingredients Chipotle Chilli Flakes, to taste
  • 1 unwaxed lime, zest and juice
  • 4 large or 8 small tortilla wraps
  • 1 sweet cos, shredded
  • 200g tub tomato salsa

Method

  1. Cut the chicken into strips. Deseed the peppers and cut into strips. Thickly slice the red onion and halve the baby corn lengthways

  2. Place the oil in a large bowl and add the cumin, paprika, chilli flakes and some salt. Add the chicken, mix well, then toss in the peppers, onion and baby corn

  3. Set a wok over high heat. When ready, add the chicken and veg mix and cook for 8-10 minutes, stirring frequently, until the chicken is cooked through with no pink meat and juices that run clear and the vegetables are just cooked.. Remove from the heat, stir in the lime zest and juice, then check the seasoning.

  4. Warm the tortilla wraps according to pack instructions, top with the lettuce, chicken and salsa, then fill and roll.

Cook’s tip

Fajitas can be easily adapted – try this with pork or steak strips instead of chicken. Serve with any favourite toppings, such as soured cream, guacamole, pickled jalapeños, coriander leaves or crushed tortilla chips.
