Ingredients

  • 300g pitted cherries, plus six whole cherries for garnish
  • 70g caster sugar
  • ½ lemon juice
  • 1 bottle Mateus Rosé, Portugal

Method

  1. Whizz pitted cherries with caster sugar and the lemon juice in a blender until smooth. Transfer to a large, freezerproof container and stir in wine. Freeze overnight.

  2. When ready to serve, break up with a fork, then blend briefly again in batches, adding cold water as needed, to reach a slushy consistency. Serve in cocktail or wine glasses, with a cherry on top.
