Ingredients: 50 g fresh or frozen blackberries; 35 ml Doorly’s 5 Year Old Barbados Rum; 10 ml sugar syrup; 10 ml lime juice; 1 handful/s ice cubes; 75 ml sparkling wine; 50 ml sparkling water; 1 sprig/s rosemary

A sparkling ode to late summer, this lets the flavour of the blackberries shine.

50g fresh or frozen blackberries
35ml Doorly’s 5 Year Old Barbados Rum
10ml sugar syrup
10ml lime juice
1 handful/s ice cubes
75ml sparkling wine
50ml sparkling water
1 sprig/s rosemary

In a blender, whizz fresh or frozen blackberries, Doorly’s 5 Year Old Barbados Rum, sugar syrup and lime juice until smooth. Press through a sieve and discard the seeds. Pour the mixture into a glass filled with ice cubes. Top with sparkling wine and sparkling water, stirring gently to combine. Garnish with a sprig of rosemary.
