Ingredients

  • 50g fresh or frozen blackberries
  • 35ml Doorly’s 5 Year Old Barbados Rum
  • 10ml sugar syrup
  • 10ml lime juice
  • 1 handful/s ice cubes
  • 75ml sparkling wine
  • 50ml sparkling water
  • 1 sprig/s rosemary

Method

  1. In a blender, whizz fresh or frozen blackberries, Doorly’s 5 Year Old Barbados Rum, sugar syrup and lime juice until smooth. Press through a sieve and discard the seeds. Pour the mixture into a glass filled with ice cubes. Top with sparkling wine and sparkling water, stirring gently to combine. Garnish with a sprig of rosemary.
