Smash burger: Medium heat (6-7 mins). Preheat a frying pan over a medium heat for 3-4 minutes with no oil. Due to the bone marrow, the burger is self-basting. While the pan is heating, cut a piece of baking paper into a square that is twice the size of the burger.
Place the burgers into the pan, place baking paper on top, then flatten ("smash") with a burger press or metal spatula to approx. 10mm, keeping pressure on for the first 15 seconds. Cook for 3 minutes, then flip over for a further 3-4 minutes. Ensure they are steaming hot all the way through, any juices run clear and there is no pink or rare meat inside. Do not reheat once cooled.
Standard burger: Medium heat (16-18 mins). Preheat a frying pan over a medium heat for 3-4 minutes with no oil. Due to the bone marrow, the burger is self-basting. Place the burgers into the pan, turning occasionally to prevent burning. Ensure they are steaming hot all the way through, any juices run clear and there is no pink or rare meat inside.
