To defrost: It is very important to ensure your turkey crown is fully defrosted before cooking and you can check this by ensuring that there are no ice crystals in the cavity and the meat does not feel frozen upon piercing thicker parts with a fork. Once removed from the freezer, remove the packaging and put the turkey onto a dish of sufficient size to contain the liquid as it thaws, cover and store at the bottom of the fridge until required.
Approximate thawing guide:
10 to 12 hours per kilogram in a fridge at 4°C.
Preparation: Do not wash poultry before cooking. Wash hands after handling raw poultry. Use separate kitchen utensils and surfaces for raw poultry and cooked, or wash between uses. Unwrap and dispose of packaging carefully. All cooking appliances vary. This is a guide only.
Roast, Chilled
Gas 4, 180°C, 160°C, 35 mins per kg + 15 mins
Cooking guidelines: For best results, cook in a fan oven. As appliances can vary, we recommend you check the running temperature of your oven with an oven thermometer before cooking your turkey, as these cooking guidelines are based on a known oven temperature.
Roast in oven: Preheat oven. Place turkey crown in a large roasting tin, brush with melted butter or oil, cover the bird with foil, tucking the foil down and around the sides of the crown keeping the foil inside the fin. Place roasting tin in the centre of the oven. Remove the foil for the last 15 minutes to brown if required, pierce the thickest part of the breast with a skewer to check that juices run clear. If more cooking is required re-cover the crown with foil and return to the oven, checking every 15 minutes. Once cooked remove from the oven, cover with foil and stand for a minimum of 30 minutes.
Warning: Ensure product is thoroughly cooked, that juices run clear and that no pink colour remains
