Preparation: Wash hands after handling raw meat. Use separate kitchen utensils and surfaces for raw meat and cooked, or wash between uses. Unwrap and dispose of packaging carefully. All cooking appliances vary. This is a guide only.
Gas 7, 220°C, Fan 200°C 30 mins per 500g + 30 mins
Remove all packaging and place the joint onto a roasting tray. Rub the rind dry with kitchen roll and add oil and salt, working into the cuts. Then preheat the oven. Once the oven is pre-heated put on the middle shelf of the oven. Cook for 30 minutes. Reduce the temperature to 180° C/Fan 160°C/Gas 4 for the remaining cooking time. If the crackling is still a bit soft, turn the temperature back up to 220°C/fan 200°C/gas 7 for the last 15 minutes. Cook thoroughly until the juices run clear and there is no pink meat. Rest for 20 minutes before carving. Do not reheat once cooled.
