Preheat oven. Remove all packaging. Preheat a non-stick frying pan on a medium/high heat and seal rack for 2 minutes on each side. Transfer to a roasting tray and place in centre of the oven, cook until juices run pink for medium or clear for well done. Cover with foil and rest in a warm place for 3 minutes before carving. …Do not reheat once cooled. (Time MEDIUM 15-17 mins; WELL DONE 20-22 mins, Oven: 190°C, Fan: 170°C, Gas: Gas Mark 5)
