Cook thoroughly until the juices run clear and there is no pink meat.

Oven cook

From Chilled

Preheat oven. Remove all packaging and place the joint on a baking tray. Place the joint on the middle shelf of the oven to cook for 45 minutes. Turn oven temperature down to 180°C/Fan 160°C/Gas 4 and cook for 30 mins per 500g. Remove the crackling from the joint and cover the joint with foil to rest. Place the crackling back in the oven and turn the temperature back up to 240°C/Fan 220°C/Gas 9 for further 15 mins. …Do not reheat once cooled. (Time 45 mins+30 mins per 500g, Oven: 240°C, Fan: 220°C, Gas: Gas Mark 9)
