Cook thoroughly until the juices run clear and there is no pink meat.
Oven cook
From Chilled
Preheat oven. Remove the rib rack from the fridge, open the film and keep at room temp for 1 hour before cooking. Place the rib rack in a deep sided roasting tray in the centre of the oven for the calculated cook time, using the calculation of 40 minutes per 500g. Rotate the pork rack halfway through cooking. To carve the rack carefully remove the crackling and either cut into x4 extremely generous portions or with a knife carefully cut down between the bones or cut down the bones removing the meat from the rack and slice into 12 slices. …Do not reheat once cooled. (Time 40 mins per 500g, Oven: 240°C, Fan: 220°C, Gas: Gas Mark 9)
