Tropical rice pudding

Ingredients

  • 1 ripe Waitrose mango
  • 3 cardamom pods, seeds crushed
  • 1 unwaxed lime, zest, plus extra to serve (optional)
  • 2 x 150g Clotted Cream Rice Puddings
  • 2 ripe Waitrose Passion Fruit, pulp only
  • Urban Fruit Gently Baked Coconut Chips, to serve

Method

  1. Put ½ the mango flesh in a blender with the crushed cardamom seeds and lime zest; whizz until you have a smooth purée. Empty the rice puddings into a large bowl, add the mango mixture and combine.

  2. Spoon the pudding mixture into 2 bowls. Thinly slice the remaining ½ mango and use to top the puddings, along with the passion fruit pulp and coconut chips, adding a little extra lime zest, if liked.

Cook’s tip

Make the mango purée a few hours ahead and stir into the rice pudding, then cover and chill until you are ready to add the toppings and serve.
