Tahini noodles with steak & broccoli

Ingredients

  • 200g pack Clearspring Organic Brown Rice Udon
  • 2 tbsp Cooks’ Ingredients Tahini
  • 1 tbsp light soy sauce, plus extra to serve
  • ½ tbsp clear honey
  • 1 lime, juice
  • 1 large clove garlic, crushed
  • 300g pack thick cut sirloin steak
  • tbsp sunflower or vegetable oil
  • 200g pack Tenderstem broccoli spears, trimmed and cut into thirds
  • 1 tbsp sesame seeds, toasted if liked, to serve

Method

  1. Cook the noodles according to pack instructions. Drain in a colander. Slowly run a kettleful of just-boiled water through them, run under cold water to cool, then set aside.

  2. Whisk the tahini, soy, honey, lime juice and garlic together with 3 tbsp just-boiled water to make a smooth sauce.

  3. Heat a large wok over a high heat until smoking. Rub the steak with ½ tbsp oil, season, then fry until browned all over, 2 minutes each side for medium-rare, 3 minutes for medium. Set aside on a plate, loosely covered with foil. Add 1 tbsp oil to the wok, then stir fry the broccoli for 4-5 minutes, until blackened at the edges.

  4. Stir fry the noodles for 3-4 minutes to reheat. Add the sauce, stir fry for 1-2 minutes until sizzling (add 3 tbsp water to loosen, if needed). Slice the steak. Serve the noodles in bowls topped with the steak and any juices. Scatter with the sesame seeds and more soy, then serve.

Cook’s tip

The tahini dressing would also be great over noodles in a salad box for lunchtime. Make a batch for the fridge, give it a shake and then toss with a salad of noodles, crisp shredded vegetables, cooked prawns or strips of tofu and perhaps some pickled ginger.
