Ingredients

  • 3 tbsp Japanese rice vinegar
  • 2 tsp clear honey
  • ½ tsp fine salt
  • 1 Essential Cucumber
  • 130g pack Garlic & Chilli King Prawns

Method

  1. In a small bowl, whisk together the Japanese rice vinegar, honey and fine salt.

  2. Using a vegetable peeler, pare long strips from the cucumber (you’ll need 12-14 strips in total, depending on the number of prawns). Toss the strips in the vinegar mixture; set aside for 10­ minutes. Lift the cucumber from the pickling liquor, gently squeeze out any excess liquid and put on kitchen paper.

  3. One at a time, fold up a strip of cucumber like an accordion and thread onto a cocktail stick. Once all the cucumber is threaded, divide the ­prawns between the cocktail sticks. Serve immediately or cover and chill for up to 2 hours.
