Ingredients

  • 2 oranges (scrubbed), pared zest and juice
  • 500g light brown soft sugar
  • 2 cinammon sticks
  • 5 star anise
  • 9 cardamom pods, lightly bashed
  • 1 tsp caraway seeds, lightly bashed
  • 20g ginger, peeled and sliced

Method

  1. Put all the ingredients in a large pan with 650ml water. Bring slowly to the boil, stirring until the sugar dissolves. Simmer for 15-20 minutes, then cool.

  2. Cover to infuse overnight, then strain through a fine sieve into the pan, bring to the boil again and pour while still hot into hot sterilised bottles. Chill for up to 2 weeks. Add 200ml syrup to 750ml red wine, cider or apple juice; heat through gently to serve.
