Indian-spiced prawn & green bean stir fry

Ingredients

  • 2 tbsp sunflower oil
  • 1 red onion, finely sliced
  • 300g pack fine green beans, trimmed
  • 200g pack Tenderstem broccoli spears
  • 190g jar Gymkhana Roasted Garlic & Chilli Marinade
  • 2 tbsp mango chutney
  • 2 x 165g packs extra large raw king prawns
  • 1 lemon, juice of ½, plus wedges
  • ½ x 100g pack coriander, leaves roughly chopped

Method

  1. Heat a large wok over a high heat and add the oil. Once smoking hot, add the onion and green beans and stir fry for 10-15 minutes.

  2. Meanwhile, cut the broccoli into thirds, then add to the wok after 5 minutes. Stir fry until the green beans are just tender and everything is a little coloured.

  3. Stir in the marinade, mango chutney and 50ml water. Bring back to a loud sizzle, then add the prawns and stir fry for 3 minutes more, until the prawns are pink, opaque and cooked through.

  4. Stir through the lemon juice and coriander, check the seasoning, then serve with lemon wedges. Perfect with basmati rice and naans, if liked.

Cook’s tip

This marinade is packed with flavour and would make an equally good veggie meal with cubes of tofu or paneer.
