Preheat the oven to 200ºC, gas mark 6. Place the chicken, garlic (cut-side up), and tomatoes into a large roasting tin. Drizzle with the oil, then season, scatter with the zaatar and roast for 20 minutes.
Lift the chicken and garlic onto a plate. Stir the butter beans (including the juices from the jar) and the feta into the tomatoes.
Return the chicken and garlic to the pan, nestle into the beans and roast for 15 minutes more, or until the beans are piping hot and the chicken is cooked through with no pink meat and juices that run clear. Scatter the coriander on top and serve with warm flatbread.
Ensure each serving includes one roasted garlic half – the tender cloves can easily be squeezed out of their papery skins with the back of a fork.
