Dark diablo

A zingy berry dessert in drinkable form, and a winning post-dinner palate cleanser. The jam really amplifies the blackcurrant flavour of the cassis.

Ingredients

  • 1 tsp blackcurrant jam
  • 15ml De Kuyper Crème de Cassis,
  • 40ml Tequila Blanco
  • 15ml lime juice
  • Splash of ginger kombucha (or ginger beer)
  • Fresh berries, to serve
  • Lime twist, to serve

Method

  1. To a shaker, add the blackcurrant jam, De Kuyper Crème de Cassis, tequila blanco, lime juice and a handful of ice; shake until very cold.

  2. Strain into a highball glass filled with ice, top up with ginger kombucha (or ginger beer) and stir gently to mix. Garnish with fresh berries and a twist of lime.
