Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 clove/s garlic, halved lengthways
  • 400g Waitrose Cherry Vine Tomatoes, vines discarded, roughly chopped
  • ½ tsp caster sugar
  • 12 Waitrose Pork & 'Nduja Croquettes
  • lemon wedges, to serve

Method

  1. Heat ½ the oil in a small saucepan and fry the onion and garlic for 8-10 minutes until soft. Add the tomatoes and remaining oil; cook for 15 minutes over a medium heat. Season, add the caster sugar, then transfer to a blender and whizz until smooth. Cook for another 5-7 minutes, over a medium-high heat, to reduce by about ¼.

  2. Meanwhile, cook the croquettes according to pack instructions, then serve with the sauce for dipping, plus lemon wedges for squeezing.
