Coriander chutney
Apples make a great substitute in Diana Henry's relish recipe if you can't get hold of green mangoes. Make this no more than 20 minutes ahead of serving – the colour goes very dull otherwise. You want freshness. If you’re concerned about heat, use half the chilli, adding more if you desire. Serve alongside aubergines, lentils & potatoes, with tamarind, dates and lime.

Ingredients
- 1 Bramley apple, peeled, cored, flesh chopped
- 8 sprig/s mint, leaves
- 75g coriander, leaves only
- ½ green pepper, deseeded and roughly chopped
- 20g ginger, peeled and roughly chopped
- 2 clove/s garlic, peeled
- 1 tsp ground cumin
- 1 green chilli, to taste, halved and deseeded
- 2 limes, juice
- 1 tbsp caster sugar
Method
Put everything into a food processor, using the juice of 1 lime and 2 tbsp warm water, then whizz using the pulse button until blended, but still with some texture. Taste for seasoning, sweetness and heat. If it seems as if there is a hole in the middle of the flavour – as if something is missing – adjust the salt and lime juice. Scrape into a bowl, then serve with the aubergine dish.
