Heat the oil in a large ovenproof frying pan over a medium-high heat. Add the onion with a pinch of salt and fry for 3-4 minutes until starting to soften. Stir in the pancetta and garlic, then fry for another 5-6 minutes
Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook for 10 minutes or until al dente. Preheat the grill to high.
Stir the tomatoes into the pan with the onions and pancetta; cook for another 5-6 minutes, stirring regularly.
Drain the pasta and add to the frying pan, tossing everything together over the heat for 1 minute; season. Scatter with the torn mozzarella and put under the grill for 3-4 minutes until melted and golden in places. Serve with freshly ground black pepper – a green salad alongside would go nicely, too.
Savvy substitutes
Keep costs down by swapping the fresh tomatoes for a can of chopped tomatoes. If you have any fresh herbs to hand (basil, parsley or oregano work well), chop and stir them into the sauce with the pasta.
