Cassoulet-style sausages & apples

Ingredients

  • 1 tbsp olive oil
  • 400g pack 6 Pork & Apple Sausages, each sausage halved
  • 1 onion, thinly sliced
  • 2 tsp smoked paprika
  • 400g can chopped tomatoes
  • 1 chicken stock pot or cube
  • 2 x 400g cans Essential Cannellini Beans, drained and rinsed
  • 3 Cox Apples, skins left on, roughly diced
  • ½ Essential Baguette, cut into 18 x 1cm slices
  • 50g frozen Cooks’ Ingredients Garlic & Herb Butter, defrosted

Method

  1. Heat the oil in a flameproof casserole and cook the sausages and onion for 8-10 minutes until golden. Stir in the paprika, then allow to sizzle until aromatic.

  2. Stir in the tomatoes, then half-fill the can with water and add to the pan. Stir in the stock pot, or crumbled cube, beans and apples, then bring to a simmer, cover and cook for 10 minutes, until the sausages are cooked through with no pink meat and the juices run clear. Check the seasoning. Meanwhile, preheat the oven to 190ºC, gas mark 5.

  3. Spread the baguette slices thinly with the garlic butter. Overlap the bread, butter-side up, over the sausage and beans, then bake for 15-20 minutes until the top is crusty and golden brown. Serve immediately.

Cook’s tip

A bag of frozen Cooks’ Ingredients Garlic & Herb Butter is a helpful ingredient to have on hand. As well as garlic bread, it’s great for finishing steaks, chicken Kyivs or a roast, and stirring through pasta with prawns. Or try an Essential Garlic Baguette for the topping. The slices are chunkier, but still taste great.
