Bombardino
This has become part of the après-ski tradition in Italian resorts, where it helps skiers defrost after a day on the slopes. Its name means ‘the bomb’ and it is unabashedly punchy! Squirty cream is very light, so floats more easily and creates swirly mounds, but you can use whipping or double cream: whip about 300ml in a bowl with 1 tbsp caster sugar and ½tsp vanilla extract to stiff peaks (serves 4-6).

Ingredients
- 50ml Advocaat
- 15ml sweet Marsala
- 25ml brandy
- Squirty whipped cream, to serve
- 1 pinch ground cinnamon, to serve
Method
Set a small pan over a very low heat, then pour in the advocaat and Marsala, stirring to combine. Heat gently for 2 minutes until warm – don’t let the mixture get too hot or it will scramble.
Pour the brandy into a small heatproof glass or cup and add the warm advocaat mixture. Stir until smooth, then top with a generous swirl of whipped cream (about 2 tbsp). Sprinkle with a pinch of cinnamon and serve straight away.
