MEAL MATHS – CHARGRILLED TOFU & LENTIL SALAD

Ready in 10 minutes | Serves 2

SCROLL DOWN TO ADD INGREDIENTS

1. Cut the tofu into 1cm-thick slices and rub with a little olive oil. Heat a griddle pan and, once hot, cook the slices for about 1-2 minutes each side, until cooked through and with attractive grill lines. 

2. Roughly chop the chargrilled vegetables and tip into a large bowl along with their oil, the lentils and salad leaves (larger ones torn). Season and toss to combine. 

3. Divide the salad between two plates and then top with the warm tofu slices.
